Cauliflower Preparation

Prepare the Cauliflower
Preheat your oven to 450°F (230°C). Remove the leaves and stem from the cauliflower and cut it into bite-sized florets.

Make the Batter
In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, garlic powder, onion powder, and water until smooth.

Coat the Cauliflower
Dip each cauliflower floret into the batter, ensuring they are evenly coated.

Fry the Cauliflower
In a large pot or deep fryer, heat the vegetable oil over medium-high heat. Fry the battered cauliflower florets in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

Make the Buffalo Sauce
In a saucepan over medium heat, melt the unsalted butter. Once melted, add in the hot sauce, garlic powder, cayenne pepper, and salt. Stir until well combined and heated through.

Toss the Cauliflower
In a large mixing bowl, combine the fried cauliflower bites with the buffalo sauce and toss until they are evenly coated.

Make the Dipping Sauce
In a mixing bowl, combine the crumbled bleu cheese, sour cream, mayonnaise, lemon juice, garlic powder, and salt. Mix until smooth and well combined.
