For the Bourbon Glaze

Prepare the Bourbon Glaze
In a saucepan, combine bourbon whiskey, brown sugar, soy sauce, Dijon mustard, minced garlic, and black pepper. Bring to a simmer over medium heat, stirring occasionally, until the mixture thickens slightly, about 10 minutes. Remove from heat and set aside.
For the Blackened Salmon

Prepare the Spice Mix
In a small bowl, mix together paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper to create the blackening spice mix.

Season the Salmon
Rub the spice mix generously over both sides of the salmon fillets.

Plate the Dish
On a plate, create a bed of wild rice, top with the blackened salmon fillet, and drizzle with bourbon glaze. Garnish with lemon wedges and chopped fresh parsley.
