Prepare the Onions
Peel the onions and slice them into thick rings, about 1/2 inch thick. Separate the rings and set them aside.

Make the Beer Batter
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and has a thick consistency.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 375°F (190°C). Use a thermometer to check the temperature for accuracy.

Dredge the Onion Rings
Dip each onion ring in the beer batter, ensuring it is well-coated. Allow excess batter to drip off.

Fry the Onion Rings
Carefully place the battered onion rings in the hot oil, a few at a time, to avoid overcrowding. Fry for 2-3 minutes or until golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.

In a small bowl, combine the mayonnaise, sriracha sauce, lemon juice, garlic powder, and salt. Mix well until smooth and evenly combined.
