Method

Preparation of Wild Rice

    Cook the Wild Rice

    In a saucepan, combine 1 cup of wild rice and 2 cups of water. Bring to a boil, then reduce heat to low. Cover and simmer for about 45 minutes or until rice is tender and water is absorbed.

Marinating Chicken

    Marinate the Chicken

    In a bowl, mix olive oil, garlic powder, salt, and black pepper. Add the chicken breasts and coat evenly. Let marinate for at least 30 minutes.

Making the Whiskey Glaze

    Prepare the Whiskey Glaze

    In a saucepan over medium heat, combine whiskey, brown sugar, soy sauce, apple cider vinegar, and butter. Stir until the mixture is smooth and the sugar is dissolved. Allow it to simmer for 10-15 minutes until it thickens slightly.

Cooking Chicken and Vegetables

    Grill the Chicken

    Preheat the grill to medium-high heat. Remove chicken from marinade and grill for 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F).

    Sauté Onions and Mushrooms

    In a skillet, heat a little olive oil over medium heat. Add sliced onions and cook until translucent. Add the mushrooms and continue cooking until soft. Season with salt and pepper.

Assembling the Dish

    Plate the Dish

    On a plate, create a bed of wild rice. Place the grilled chicken on top, then add the sautéed onions and mushrooms. Drizzle the whiskey glaze over the chicken.

    If desired, serve with a side of steamed broccoli or your choice of side.
