Bavarian Pretzel Roll Recipe

    Activate the Yeast

    In a small bowl, combine warm water (about 110°F), sugar, and yeast. Stir and let it sit for about 5-10 minutes until frothy.

    Make the Dough

    In a large mixing bowl, combine flour and salt. Once the yeast mixture is frothy, add it to the flour along with melted butter (if using). Mix until a dough forms.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let it rise in a warm area for about 1 hour, or until doubled in size.

    Preheat Oven and Prepare Baking Soda Bath

    Preheat your oven to 425°F (220°C). In a large pot, bring 10 cups of water to a boil and add baking soda.

    Shape the Rolls

    Once the dough has risen, punch it down and divide it into 12 equal pieces. Shape each piece into a roll.

    Boil the Rolls

    Carefully drop the rolls into the boiling baking soda bath, 2-3 at a time, for about 30 seconds. Remove with a slotted spoon and place on a parchment-lined baking sheet.

    Egg Wash and Salt

    Beat the egg and brush it over the tops of the rolls. Sprinkle with coarse sea salt.

    Bake the Rolls

    Bake in the preheated oven for 12-15 minutes or until golden brown. Remove and let them cool slightly before serving.

White Cheddar Sauce

    Melt the Butter

    In a medium saucepan over medium heat, melt the butter.

    Make the Roux

    Add the flour to the melted butter and whisk constantly for about 1-2 minutes until it forms a paste (roux).

    Add Milk

    Slowly whisk in the milk, ensuring no lumps form. Continue to cook for 3-5 minutes until the sauce thickens.

    Add Cheese and Seasonings

    Reduce heat to low and add the shredded white cheddar cheese. Stir until melted and smooth. Season with salt, black pepper, garlic powder, and mustard powder.

    Serve

    Serve warm over the pretzel rolls. Enjoy!
