Activate the Yeast
In a small bowl, combine warm water (about 110°F), sugar, and yeast. Stir and let it sit for about 5-10 minutes until frothy.

Make the Dough
In a large mixing bowl, combine flour and salt. Once the yeast mixture is frothy, add it to the flour along with melted butter (if using). Mix until a dough forms.

Knead the Dough
Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let it rise in a warm area for about 1 hour, or until doubled in size.

Preheat Oven and Prepare Baking Soda Bath
Preheat your oven to 425°F (220°C). In a large pot, bring 10 cups of water to a boil and add baking soda.

Shape the Rolls
Once the dough has risen, punch it down and divide it into 12 equal pieces. Shape each piece into a roll.

Boil the Rolls
Carefully drop the rolls into the boiling baking soda bath, 2-3 at a time, for about 30 seconds. Remove with a slotted spoon and place on a parchment-lined baking sheet.

Bake in the preheated oven for 12-15 minutes or until golden brown. Remove and let them cool slightly before serving.
