Prepare the Rice
Rinse the rice under cold water until the water runs clear. In a pot, combine 1 cup of rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low and cover. Cook for 15-20 minutes, or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Make the Sauce
In a small bowl, whisk together the soy sauce, sesame oil, minced garlic, ginger, cornstarch, and water until smooth.

Stir-Fry the Vegetables
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the chopped vegetables and stir-fry for about 5-7 minutes, or until they are tender-crisp.

Add the Sauce
Pour the sauce over the stir-fried vegetables and stir well to coat. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.

Fluff the cooked rice with a fork and serve it on plates. Top with the vegetable stir-fry and enjoy!
