Preparing the Fries

Cutting the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips to make fries.

Soaking the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Seasoning and Baking
Preheat the oven to 425°F (220°C). Drain and pat the fries dry, then toss them in a bowl with olive oil, salt, and black pepper. Spread them out in a single layer on a baking sheet.

Baking the Fries
Bake in the preheated oven for about 30-35 minutes or until golden and crispy, flipping halfway through.

Adding Jalapenos
Chop the jalapenos and sprinkle them over the fries during the last 5 minutes of baking.
Making the Onion Cheese Sauce

Sautéing the Onions and Garlic
In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5-7 minutes. Add minced garlic and cook for another minute.

Adding Broth and Seasonings
Gradually whisk in the vegetable broth, ensuring there are no lumps. Bring to a simmer and cook until slightly thickened, about 5 minutes.

Finishing the Sauce
Stir in the nutritional yeast, smoked paprika, salt, and black pepper. Cook for another 2-3 minutes until the sauce is thick and creamy.
