    Prepare the potatoes

    Wash and scrub the Russet potatoes thoroughly. Cut each potato into thick wedges to form steak fries.

    Season the fries

    In a large bowl, toss the potato wedges with olive oil, salt, black pepper, and paprika until evenly coated.

    Bake the fries

    Preheat the oven to 425°F (220°C). Spread the seasoned potato wedges in a single layer on a baking sheet. Bake for 30-35 minutes, flipping halfway through, until golden brown and crispy.

    Sauté the vegetables

    In a medium saucepan, melt the unsalted butter over medium heat. Add the finely chopped onion and diced jalapeno peppers. Sauté for about 5-7 minutes until the onion is translucent and softened.

    Sprinkle the flour over the sautéed vegetables and stir to combine. Cook for 1-2 minutes, then slowly whisk in the milk, stirring continuously until the mixture thickens.

    Once the sauce has thickened, reduce the heat to low and add the shredded cheddar cheese. Stir until the cheese is fully melted and incorporated. Season with garlic powder, salt, and black pepper to taste.
