Method

Filling Preparation

  1. 1

    Prepare the Spinach

Wash the spinach leaves thoroughly and chop them roughly. Set aside.

  2. 2

    Cook the Filling

In a pan, heat 1 tbs of oil over medium heat. Add the chopped onion and sauté until translucent.

  3. 3

    Add Garlic and Spinach

Add minced garlic and chopped spinach to the pan. Sauté until the spinach wilts.

  4. 4

    Add Paneer and Spices

Crumble the paneer into the pan, add chopped green chili, garam masala, and salt. Mix well and cook for 2-3 minutes.

  5. 5

    Cool the Filling

Remove the pan from heat and let the filling cool completely before wrapping.

Wrapping

  1. 6

    Prepare the Wrappers

Take a spring roll wrapper and place it on a clean surface with one corner pointing towards you.

  2. 7

    Fill the Wrapper

Place a spoonful of the cooled filling at the corner of the wrapper closest to you.

  3. 8

    Roll the Wrapper

Fold the bottom corner over the filling, then fold in the sides, and roll up tightly to form a cigar shape. Seal the edge with a little water.

  4. 9

    Repeat

Repeat the process with the remaining wrappers and filling.

Tamarind Sauce Preparation

  1. 10

    Combine Ingredients

In a small saucepan, combine tamarind paste, sugar, water, and salt.

  2. 11

    Cook the Sauce

Heat the mixture over medium heat, stirring until the sugar dissolves and the sauce thickens slightly, about 5-7 minutes.

  3. 12

    Cool the Sauce

Remove from heat and let the tamarind sauce cool before serving.

Frying

  1. 13

    Heat Oil for Frying

In a deep frying pan, heat oil to about 180°C (350°F).

  2. 14

    Fry the Cigar

Carefully place the wrapped cigars in the hot oil, frying in batches until golden brown and crispy, about 3-4 minutes.

  3. 15

    Drain Excess Oil

Remove the fried cigars from the oil and place them on paper towels to drain excess oil.
