Method

Preparation

  1. 1

    Prepare the Steak

Remove the ribeye steaks from the refrigerator and let them sit at room temperature for about 30 minutes before cooking to ensure even cooking.

  2. 2

    Season the Steak

Generously season both sides of the ribeye steaks with kosher salt and black pepper. Press the seasoning into the meat to ensure it adheres.

Cooking

  1. 3

    Preheat the Pan

Heat a cast-iron skillet or heavy frying pan over high heat until it's very hot. Add olive oil to the pan and swirl to coat.

  2. 4

    Sear the Steak

Carefully place the seasoned ribeye steaks in the hot pan. Sear for about 4-5 minutes without moving them to develop a nice crust.

  3. 5

    Flip and Add Aromatics

Flip the steaks using tongs and add the garlic cloves and rosemary to the pan. Cook for an additional 4-5 minutes for medium-rare, or until your desired doneness is reached.

  4. 6

    Baste the Steaks

As the steaks cook, tilt the pan slightly and use a spoon to baste the steaks with the pan juices for added flavor.

  5. 7

    Rest the Steaks

Once cooked, transfer the steaks to a cutting board and let them rest for 5-10 minutes to allow the juices to redistribute.

Serving

  1. 8

    Slice and Serve

Slice the ribeye steaks against the grain and serve with optional baked potatoes and steamed asparagus if desired.
