Prep Salad Base

    Prepare Spring Greens

    Rinse and dry the spring greens thoroughly. Place them in a large salad bowl.

    Slice Peaches

    Wash the peaches, remove the pits, and slice them into thin wedges. Add the peach slices to the bowl with the greens.

    Halve Cherry Tomatoes

    Wash the cherry tomatoes and cut them in half. Add them to the salad bowl.

    Slice Red Onion

    Peel and thinly slice the red onion. Add the slices to the salad mixture.

Fry Goat Cheese

    Prepare Cheese

    Using your hands, form the goat cheese into small discs, about 1 inch in diameter.

    Set Up Breading Station

    Place the flour, beaten egg, and breadcrumbs in three separate shallow bowls.

    Bread Goat Cheese

    Dredge each goat cheese disc in flour, dip in beaten egg, and then coat with breadcrumbs. Repeat until all discs are breaded.

    Fry Goat Cheese

    Heat olive oil in a frying pan over medium heat. Once hot, add the breaded goat cheese discs and fry until golden brown, about 2-3 minutes per side. Remove and place on a paper towel to drain excess oil.

Prepare Dressing

    Mix Dressing Ingredients

    In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and black pepper until well combined.

Assemble Salad

    Drizzle the dressing over the salad base and toss gently to combine all ingredients.

    Top with Goat Cheese

    Carefully place the fried goat cheese discs on top of the salad.
