    Prepare the Steak

    Take the filet mignon out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking.

    Season

    Rub the filet mignon with olive oil, then season generously with salt, black pepper, and fresh rosemary on both sides.

    Cook the Steak

    Heat a skillet over medium-high heat. Once hot, add the seasoned filet mignon. Cook for about 4-5 minutes on each side for medium-rare, adjusting time for desired doneness.

    Rest

    Once cooked to your liking, remove the steak from the skillet and let it rest for 5 minutes before slicing.

Mashed Potatoes

    Prepare the Potatoes

    Peel and chop the russet potatoes into evenly sized chunks. Rinse under cold water.

    Boil the Potatoes

    Place the chopped potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook for 15-20 minutes, or until the potatoes are fork-tender.

    Mash the Potatoes

    Drain the boiled potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

    Serve

    Spoon the mashed potatoes onto a plate and place the sliced filet mignon on top or alongside.
