Prep the Seafood
In a bowl, gently combine the lump crab meat and shrimp. Be careful not to break the crab meat.

Mix Vegetables and Spices
Add the diced pimento, saffron strands, chopped green onions, minced garlic, and finely chopped red bell pepper into the seafood mixture. Stir gently to combine.

Prepare the Binders
In a separate bowl, mix the mayonnaise, breadcrumbs, and beaten egg until well combined. This will be used to bind the crab cakes.

Season the Mixture
Add Old Bay seasoning, salt, and black pepper to the seafood and vegetable mixture. Then add the mayonnaise mixture to this bowl and fold gently until everything is well combined.

Form the Crab Cakes
With your hands, form the mixture into patties about 2 inches in diameter and place them on a plate.

Heat the Oil
In a large skillet, heat the olive oil over medium heat until shimmering.

Fry the Crab Cakes
Carefully add the crab cakes to the skillet, cooking in batches if necessary. Fry for about 4-5 minutes on each side, until golden brown and crispy.

Drain and Serve
Once cooked, transfer the crab cakes to a paper towel-lined plate to drain excess oil. Serve warm with your choice of dipping sauce.
