Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate over a double boiler or in the microwave, stirring frequently until smooth. Set aside to cool slightly.

Whip the Cream
In a large mixing bowl, pour the heavy cream and whip it with an electric mixer on medium speed until soft peaks form. This should take about 3-5 minutes. Be careful not to overwhip as it can turn into butter.

Separate the Eggs
Separate the egg yolks from the egg whites. Place the yolks in a mixing bowl and the whites in another clean bowl. Make sure there are no traces of yolk in the whites for better whipping.

Combine Chocolate and Egg Yolk Mixture
Slowly add the slightly cooled melted chocolate into the egg yolk mixture, mixing well until fully combined. Stir in the vanilla extract and a pinch of salt.

Whip Egg Whites
Using a clean, dry mixer, whip the egg whites until stiff peaks form. This should take about 3-5 minutes.

Fold Ingredients Together
Gently fold one-third of the whipped cream into the chocolate mixture to lighten it, then carefully fold in the remaining whipped cream until no streaks remain. Finally, fold in the whipped egg whites gently until fully incorporated.

Chill the Mousse
Spoon the mousse into serving dishes or glasses and refrigerate for at least 2 hours, or until set.

Once set, serve the chocolate mousse chilled. You can garnish it with whipped cream, chocolate shavings, or fresh berries if desired.
