Prepare the Cauliflower
Preheat your oven to 400°F (200°C). Remove the leaves from the cauliflower and cut it into small florets. Place the florets in a large bowl.

Season the Cauliflower
Drizzle the cauliflower florets with olive oil, and sprinkle with salt and black pepper. Toss well to coat.

Roast the Cauliflower
Spread the seasoned cauliflower florets onto a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, or until they are golden brown and tender, stirring halfway through.

Prepare the Arugula
While the cauliflower is roasting, rinse the arugula leaves under cold water, then pat dry with a clean kitchen towel or use a salad spinner.

Prepare the Black Garlic
Peel the black garlic cloves and mash them into a paste using a fork or the back of a spoon.

Combine Ingredients
In a large serving bowl, combine the roasted cauliflower, arugula, and mashed black garlic. Drizzle the balsamic glaze over the top and toss gently to combine.
