Prepare the Mac and Cheese Base

    In a large pot, bring salted water to a boil. Add the elbow macaroni and cook until al dente according to package instructions. Drain and set aside.

    In a large saucepan over medium heat, melt the unsalted butter. Once melted, whisk in the all-purpose flour and stir for about 2 minutes until bubbly and golden, making sure it doesn't brown.

    Gradually whisk in the milk, ensuring there are no lumps. Continue to whisk until the mixture thickens and bubbles, about 5-7 minutes.

    Incorporate the Cheeses

    Remove from heat and stir in the sharp cheddar, Monterey Jack, and cream cheese until melted and smooth. Add the Cajun seasoning, salt, and black pepper to taste.

    Add the cooked macaroni to the cheese sauce, stirring until well combined. Fold in the chopped lobster meat gently.
