    Prepare the Potatoes

    Peel the potatoes and cut them into thin fries. Soak the fries in cold water for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat beef tallow in a deep fryer or heavy pot to 160°C (320°F). Drain the fries and dry them. Fry the potatoes in batches for about 5-7 minutes until pale and soft. Remove and drain on paper towels.

    Cook the Steak

    Season the butcher's steak with salt and pepper. In a hot skillet over medium-high heat, add a little oil or beef tallow. Cook the steak for about 4-5 minutes on each side for medium rare. Remove the steak and let it rest.

    Prepare the Au Poivre Sauce

    In the same skillet, add butter and sauté for a minute. Add brandy or cognac and flambé (carefully ignite to burn off alcohol). Add heavy cream and let simmer until thickened. Season with salt and pepper to taste.

    Finish the Fries

    Increase the oil temperature to 190°C (375°F). Fry the pre-cooked fries again until golden brown and crispy, about 3-4 minutes. Drain and season with salt.

    Serve

    Slice the rested steak and serve alongside the hot beef-fat fries. Drizzle the au poivre sauce over the steak.
