Preparation and Cooking

    Candied Ginger

    In a small saucepan, combine sugar and water over medium heat. Stir until the sugar dissolves. Add grated ginger and simmer for 10 minutes. Remove from heat and let cool. Strain out ginger and let the syrup thicken.

    Preparing the Foie Gras

    Season the foie gras with salt and pepper. Heat a skillet over medium-high heat and add the butter. Once melted and shimmering, add the foie gras slices and sear for about 30 seconds on each side until golden brown. Remove from the skillet and let rest briefly.

    Griddled Toast

    In the same skillet, add the slices of baguette or sourdough bread. Grill until golden brown on both sides, about 2-3 minutes.

    Assembly

    Place the seared foie gras on the griddled toast, drizzle with the sweet ginger emulsion, and garnish with house candied ginger. Serve immediately.
