Prepare the Duck Breasts
Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

Cook the Duck Breasts
In a skillet, heat the olive oil over medium heat. Place the duck breasts skin-side down and sear for about 6-8 minutes, allowing the fat to render and the skin to become crispy. Flip the breasts and cook for an additional 4-6 minutes for medium-rare. Remove from skillet and let rest.

Cook the Lentils
In a separate pot, combine the green lentils with 3 cups of water and a pinch of salt. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until tender. Drain and set aside.

Combine and Serve
Mix the cooked lentils with the sautéed vegetables and chervil. Serve the seared duck breast on a bed of the lentil mixture.
