Preparing the Soubise

    Sautéing the Vegetables

    In a medium saucepan, melt the butter over medium heat. Add the diced fennel, onion, and apple. Sauté until the vegetables are soft and translucent, about 10 minutes.

    Simmering

    Add the heavy cream, salt, and pepper to the saucepan. Bring to a gentle simmer and cook for an additional 10 minutes until the mixture thickens slightly.

    Blending

    Remove from heat and let cool slightly. Transfer the mixture to a blender and blend until smooth. Set aside.

Cooking the Scallops

    Searing the Scallops

    Pat the scallops dry with paper towels and season with salt and pepper. Heat olive oil in a skillet over high heat. Once hot, add the scallops, making sure not to overcrowd the pan. Cook for 2-3 minutes per side until golden brown and cooked through.

    Plating

    On a plate, spoon a generous amount of the apple fennel soubise. Place the seared scallops on top and serve immediately.
