Prepare the Bone Marrow
Preheat your oven to 450°F (230°C). Place the bone marrow bones upright in a roasting pan, ensuring they are well spaced.

Season the Bones
Sprinkle salt and black pepper generously over the exposed marrow in each bone.

Roast the Bones
Roast in the preheated oven for about 15-20 minutes until the marrow is soft and begins to separate from the bone.

Prepare the Topping
While the bones are roasting, finely chop the garlic and mix it with the breadcrumbs, truffle oil, and a pinch of salt. Set aside.

Add Topping to Bones
Remove the bones from the oven and sprinkle the breadcrumb mixture over the marrow.

Return the bones to the oven and roast for an additional 5 minutes, or until the breadcrumbs are golden brown.

Serve the roasted bone marrow hot, topped with fig jam and accompanied by pickled shallots for a tangy contrast.
