    Prepare the Pork Belly

    Preheat the oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern, making sure not to cut too deep.

    Season the Pork

    Rub the pork belly with salt, black pepper, and minced garlic. Place it in a roasting pan, skin-side up.

    Make the Glaze

    In a saucepan, combine balsamic vinegar and brown sugar. Bring to a simmer over medium heat and stir until the sugar is dissolved.

    Roast the Pork

    Pour half of the balsamic glaze over the pork belly. Cover the pan with foil and roast for 2 hours.

    Glaze and Finish Cooking

    After 2 hours, remove the foil and pour the remaining glaze over the pork belly. Increase the oven temperature to 425°F (220°C) and roast for an additional 30-40 minutes, until the skin is crispy.

    Serve

    Let the pork belly rest for 10 minutes before slicing. Serve with apple sauce on the side.
