Prepare the Pear
Slice the forelle pear thinly and set aside.

Roast the Tomatoes
Preheat the oven to 200°C (392°F). Toss the heirloom cherry tomatoes with a drizzle of rosemary-infused olive oil and a pinch of Maldon salt. Roast them in the oven for about 15 minutes or until they are blistered and tender.

Assemble the Dish
On a serving plate, spread a generous spoonful of romesco sauce. Place the burrata cheese in the center, then arrange the sliced forelle pear and roasted cherry tomatoes around it.

Finish with Oil and Herbs
Drizzle the remaining rosemary-infused olive oil over the burrata and garnish with fresh herbs. Add extra Maldon salt on top to taste.
