    Mix Ingredients

    In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat, stirring until the sugar is dissolved.

    Temper Egg Yolks

    In a separate bowl, whisk together the egg yolks. Slowly pour in about 1 cup of the warm milk mixture into the egg yolks, whisking constantly to temper the eggs.

    Combine Mixtures

    Pour the tempered egg yolk mixture back into the saucepan with the remaining milk mixture. Cook over medium heat, stirring constantly until the mixture thickens enough to coat the back of a spoon.

    Chill Mixture

    Remove from heat and stir in the vanilla extract. Let the mixture cool down to room temperature, then refrigerate for at least 4 hours or overnight.

    Churn Gelato

    Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions. Transfer to a container and freeze until set.
