Gelato Preparation

    Make the Base

    In a saucepan, combine milk, heavy cream, and sugar. Heat over medium heat until it's hot but not boiling.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks until they are pale. Slowly add a small amount of the hot milk mixture to temper the yolks, whisking constantly.

    Combine Mixtures

    Pour the tempered yolks back into the saucepan with the remaining milk mixture. Cook over low heat, stirring constantly until it thickens enough to coat the back of a spoon.

    Add Flavoring

    Remove from heat and stir in the vanilla extract and your choice of seasonal flavoring. Let the mixture cool.

    Chill and Churn

    Refrigerate the mixture for at least 4 hours or overnight. Then churn in an ice cream maker according to the manufacturer’s instructions.

    Freeze and Serve

    Transfer the gelato to a container and freeze for at least 2 hours before serving.
