Prepare the Cream Mixture
Preheat your oven to 325°F (160°C). In a medium saucepan, combine the heavy cream, vanilla extract, orange zest, lemon zest, and lime zest. Heat over medium heat until just simmering, then remove from heat and let steep for 15 minutes.

Whisk Egg Yolks
In a mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick.

Combine Mixtures
Gradually add the warm cream mixture to the egg yolk mixture, whisking constantly to prevent the eggs from scrambling. Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl to remove zest and any curdled bits.

Cool and Refrigerate
Remove the ramekins from the water bath and let them cool to room temperature. Cover with plastic wrap and refrigerate for at least 2 hours, or up to overnight.

Caramelize the Sugar
Before serving, sprinkle a thin layer of granulated sugar on top of each custard. Using a kitchen torch, carefully caramelize the sugar until it forms a golden crust. If you don't have a torch, you can place the ramekins under a broiler for a few minutes, watching closely to avoid burning.
