Prepare the Crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.

Make the Cheesecake Filling
In a large mixing bowl, beat the cream cheese until smooth. Add sugar, sour cream, and vanilla extract, mixing until combined. Add eggs one at a time, mixing on low until just blended. Pour the filling over the cooled crust.

Bake the Cheesecake
Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are slightly puffed. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour. Refrigerate for at least 4 hours or overnight.

Prepare the Bananas Foster Sauce
In a skillet over medium heat, melt the butter. Add brown sugar, stirring until dissolved. Add sliced bananas and cook for 2-3 minutes. Carefully add rum and ignite (if desired) to flambé. Add cinnamon and stir until well combined. Let cool slightly.

Slice the chilled cheesecake and serve topped with bananas foster sauce and oat tuiles on the side.
