    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the pancetta and cook until crispy. Add the onion, carrot, celery, and garlic, sautéing until the vegetables are soft.

    Add the ground beef and ground pork to the pot, stirring to break up any clumps. Cook until the meat is browned.

    Deglaze with Wine

    Pour in the red wine and let it simmer for a few minutes, allowing the alcohol to evaporate.

    Add Tomatoes and Simmer

    Stir in the crushed tomatoes, season with salt and pepper, and bring to a boil. Reduce heat and let it simmer for about 30 minutes.

    After the sauce has thickened, stir in the milk and let it cook for an additional 10 minutes.
