Method

Preparation Steps

  1. 1

    Prepare the Potatoes

Wash and peel the russet potatoes. Cut them into thick fries, about 1/4 to 1/2 inch wide.

  2. 2

    Soak the Potatoes

Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

  3. 3

    Heat the Beef Tallow

In a large pot or deep fryer, heat the beef tallow to 350°F (175°C).

  4. 4

    Dry the Potatoes

After soaking, drain the fries and pat them dry with paper towels. This step is crucial for achieving a crispy texture.

  5. 5

    Fry the Potatoes

Carefully add the dried fries to the hot beef tallow in batches. Fry until golden brown and crispy, about 5-7 minutes.

  6. 6

    Drain and Season

Remove the fries from the oil and place them on paper towels to drain. Season with salt and black pepper to taste.

  7. 7

    Add Parmesan and Chives

While the fries are still hot, sprinkle the grated Parmesan cheese over them and toss with chopped chives.

  8. 8

    Serve

Serve the beef-fat fries immediately while hot and crispy.
