Veggie Burger Patty

    Prepare Quinoa

    Rinse the quinoa under cold water. In a pot, combine quinoa and 1 cup of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed. Fluff with a fork and let cool.

    Make the Patty Mix

    In a large bowl, mash the black beans with a fork. Add cooled quinoa, diced bell pepper, diced onion, minced garlic, cumin, salt, black pepper, breadcrumbs, and beaten egg. Mix until well combined.

    Shape the Patties

    Form the mixture into patties, about 1/2 inch thick. Place on a plate and refrigerate for at least 30 minutes to firm up.

    Cook the Patties

    Heat a skillet over medium heat with a bit of oil. Cook the patties for about 5-7 minutes on each side, until golden brown and heated through.

Pickled Red Onions

    Pickle the Onions

    In a bowl, combine sliced red onion, white vinegar, sugar, and salt. Mix well and let sit for at least 30 minutes, stirring occasionally.

Chipotle Aioli

    Make the Aioli

    In a small bowl, combine mayonnaise, minced chipotle in adobo sauce, and lime juice. Mix until smooth and set aside.

Assemble the Burger

    Toast the Bread

    Slice the ciabatta bread in half and toast it until golden brown.

    Build the Burger

    Spread chipotle aioli on both halves of the toasted ciabatta. Place a veggie burger patty on the bottom half, add arugula, pickled red onions, and sliced avocado. Top with the other half of the ciabatta.
