Season the Ribs

Pat the Angus short ribs dry with paper towels. Season generously with salt and black pepper on all sides.

Sear the Ribs

In a large skillet, heat the olive oil over medium-high heat. Add the seasoned short ribs and sear for 3-4 minutes on each side until browned. Remove ribs from the skillet and set aside.

Sauté Aromatics

In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent.

Deglaze the Pan

Pour in the red wine and scrape the bottom of the skillet to release any browned bits. Let it simmer for about 2-3 minutes.

Prepare the Slow Cooker

Transfer the sautéed onion and garlic mixture to a slow cooker. Add the seared short ribs on top.

Add Remaining Ingredients

Pour in the beef broth and Worcestershire sauce. Add the chopped carrots, celery, thyme, and bay leaves.

Cook the Ribs

Cover the slow cooker and cook on low for 8 hours or on high for 4 hours, until the ribs are tender and falling off the bone.

Serve the Dish

Remove the ribs from the slow cooker and discard the bay leaves and thyme sprigs. Serve the short ribs with the cooking liquid spooned over the top.
