Prepare the Pickled Red Onions

If you don't have pickled red onions, you can prepare them by slicing red onions thinly and soaking them in a mixture of vinegar, sugar, and salt for at least 30 minutes.

Slice the Avocado

Cut the avocado in half, remove the pit, and slice it into thin pieces.

Heat the Flatbread

Warm the flatbreads in a dry skillet over medium heat for about 1-2 minutes on each side until slightly toasted.

Layer the Ingredients

On each piece of flatbread, spread 25g of chipotle aioli evenly. Then, layer with 100g of roasted turkey, 30g of baby spinach, 50g of pickled red onions, and 50g of shredded mozzarella cheese.

Melt the Cheese

If desired, place the topped flatbreads under a broiler for 1-2 minutes until the cheese is melted and bubbly.

Add the Avocado

Once the cheese is melted, top each flatbread with the sliced avocado.

Serve

Cut the flatbreads into slices and serve immediately while warm.
