Preparing the Stuffing
Prepare the Roasted Red Peppers
If using jarred roasted red peppers, drain and chop them into small pieces. If using fresh, roast them over an open flame or in the oven until charred, then peel and chop.
Chop the Scallions
Wash and finely chop the scallions, both the white and green parts.
Combine Filling Ingredients
In a bowl, mix the chopped roasted red peppers, scallions, and crumbled goat cheese. Set aside.
Making the Burger Patties
Combine Turkey and Seasonings
In a large bowl, combine the ground turkey, garlic powder, onion powder, salt, and black pepper. Mix gently until just combined, being careful not to overwork the meat.
Form the Patties
Divide the turkey mixture into four equal portions. Flatten each portion into a patty and create a small indentation in the center of each patty.
Stuff the Patties
Spoon an equal amount of the roasted red pepper, scallion, and goat cheese mixture into the indentation of each patty. Fold the edges of the patty over the filling to seal it in, ensuring there are no gaps.

Toast the Buns
While the burgers are cooking, you can toast the burger buns on the grill or in a toaster until they are golden brown.

Wash and slice the romaine lettuce and tomato.
Assemble the Burger
On the bottom half of each toasted bun, place a leaf of romaine, followed by the cooked turkey burger, a slice of tomato, and a generous amount of pickled red onions. Top with the other half of the bun.
