Salad Preparation

Prepare the Romaine

Wash and chop the romaine lettuce into bite-sized pieces. Place in a large salad bowl.

Dice the Avocado

Cut the avocado in half, remove the pit, and scoop out the flesh. Dice into small cubes and add to the salad bowl.

Add Corn and Black Beans

Drain and rinse the black beans. Add the black beans and fire-roasted corn to the salad bowl.

Chop the Tomato

Dice the tomato and add it to the salad bowl.

Chop the Cilantro

Finely chop the cilantro and sprinkle it over the salad.

Add Tortilla Strips

Top the salad with tortilla strips for extra crunch.

Combine Ingredients

In a small bowl, combine the olive oil, lime juice, chipotle in adobo sauce, honey, salt, and black pepper.

Mix Well

Whisk the dressing until all ingredients are well combined and smooth.
