Preparation of Ingredients

    Prepare the Meat

    If using short ribs, make sure they are cooked and shredded. If using bacon or chorizo, cook them until crispy and crumble into smaller pieces. If you are using vegan bacon, follow the package instructions to cook.

    Prep the Vegetables

    Wash and shred the lettuce. Slice the tomato and onion into thin slices.

    Grate the Cheese

    Grate the cheddar cheese and set it aside.

Assembling the Torta

    Slice the Ciabatta

    Carefully slice the ciabatta bread in half horizontally.

    Layer the Ingredients

    Spread a generous amount of chipotle aioli on the bottom half of the ciabatta. Layer the shredded short ribs, bacon, or chorizo on top of the aioli. Sprinkle the grated cheddar cheese generously over the meat.

    Add Optional Toppings

    Top the cheese with shredded lettuce, sliced tomatoes, and onions if desired.

Toasting the Torta

    Toast the Sandwich

    Close the sandwich with the top half of the ciabatta. Preheat a skillet or panini press over medium heat. Toast the torta for about 5-7 minutes on each side, or until the bread is golden and crispy and the cheese is melted.
