Method

Prepare the Salmon

    Season the Salmon

    Preheat the oven to 375°F (190°C). Rub the salmon fillets with olive oil, salt, and black pepper.

    Bake the Salmon

    Place the seasoned salmon on a baking sheet lined with parchment paper and bake for about 15-20 minutes or until cooked through and flakes easily with a fork.

Cook the Bacon

    Fry the Bacon

    In a skillet, cook the bacon strips over medium heat until crispy. Remove from skillet and drain on paper towels.

Prepare the Vegetables

    Slice the Avocado and Tomato

    While the salmon and bacon are cooking, slice the avocado and tomato. Set aside.

    Steam the Spinach

    Steam the fresh spinach in a pot with a little water until wilted, about 3-4 minutes. Drain and set aside.

Make the Vinaigrette

    Combine Ingredients

    In a small bowl, whisk together lemon juice, olive oil, honey, salt, and black pepper to taste until well combined.

Assemble the Sandwich

    Toast the Ciabatta

    Slice the ciabatta bread in half and toast until golden brown.

    Layer the Ingredients

    On the bottom half of the ciabatta, layer the steamed spinach, followed by the baked salmon, crispy bacon, sliced avocado, and tomato.

    Add Vinaigrette and Sriracha

    Drizzle the lemon vinaigrette over the top and add a dash of sriracha to taste.

    Finish and Serve

    Place the top half of the ciabatta on the sandwich and slice in half to serve.
