1. Prepare the Eggs

Crack the two eggs into a bowl. Add salt and black pepper. Whisk the eggs until well combined.

2. Cook the Eggs

In a non-stick skillet, melt the butter over medium heat. Once the butter is melted and bubbling, pour in the whisked eggs. Let them sit for a few seconds.

3. Scramble the Eggs

Using a spatula, gently stir the eggs, pushing them from the edges of the skillet toward the center. Continue to cook and stir until the eggs are softly scrambled and slightly runny.

4. Add Cheese

Sprinkle in the cheddar cheese and continue to stir until the cheese is melted and the eggs are fully cooked. Remove from heat.

Preheat your oven to 425°F (220°C).

6. Prepare the Potatoes

Wash and dice the potatoes into small cubes. In a mixing bowl, combine the potatoes with olive oil, garlic powder, paprika, salt, and black pepper. Toss until the potatoes are well coated.

7. Roast the Potatoes
