Salad Preparation

Prepare the Greens

In a large bowl, combine the chopped kale and romaine lettuce. Toss them together until evenly mixed.

Add Cherry Tomatoes and Radish

Add the halved cherry tomatoes and sliced watermelon radish to the greens. Gently mix to incorporate.

Pickling Vegetables

Add Pickled Onions and Carrots

Incorporate the pickled red onions and pickled carrots into the salad bowl, mixing gently to ensure even distribution.

Crunchy Topping

Roast Chickpeas

If not already roasted, roast the chickpeas in the oven at 400°F (200°C) for about 20-30 minutes or until crispy. Allow to cool before adding to the salad.

Add Chickpeas and Parmesan

Once the chickpeas have cooled, add them to the salad along with the grated Parmesan cheese. Toss lightly to combine.

Dressing Preparation

Make the Caesar Dressing

In a small bowl, whisk together the mayonnaise, lemon juice, minced garlic, Worcestershire sauce, and anchovy paste. Season with salt and black pepper to taste.

Pour the Caesar dressing over the salad mixture and toss well to ensure all ingredients are coated evenly.
