Preparation of Filling

    Cook the Sweet Potato

    Peel and chop the sweet potato into small cubes. Boil in a pot of water for about 15 minutes or until tender. Drain and set aside.

    Prepare the Scallions

    While the sweet potato is cooking, wash the scallions and chop them into thin slices, both the green and white parts.

    Combine the Filling

    In a mixing bowl, combine the cooked sweet potato, vegan cheese, and chopped scallions. Add salt and black pepper to taste. Mix well.

Assembling the Burrito

    Prepare the Tortillas

    Heat a non-stick skillet over medium heat and lightly brush with olive oil. Place the tortillas in the skillet for about 30 seconds on each side to warm them up.

    Fill the Tortillas

    Take one warm tortilla and add a generous amount of the filling mixture to the center. Be careful not to overfill.

    Roll the Burrito

    Fold the sides of the tortilla inward and then roll it from the bottom to the top tightly to enclose the filling. Repeat with the second tortilla.

Cooking the Burritos

    Cook the Burrito

    Return the burritos to the skillet seam side down. Cook for about 2-3 minutes until golden brown, then flip and cook the other side for an additional 2-3 minutes.
