Method

Pickling the Onions

  1. 1

    Prepare Pickled Red Onions

Slice the red onion thinly and place it in a jar. In a bowl, combine apple cider vinegar, water, sugar, and salt. Stir until the sugar and salt dissolve. Pour the mixture over the onions and let them pickle for at least 30 minutes.

Preparing the Avocado

  1. 2

    Mash the Avocado

Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Add lime juice, salt, and black pepper. Mash with a fork until desired creaminess is achieved.

Cooking the Eggs

  1. 3

    Scramble the Eggs

In a skillet over medium heat, crack the eggs and whisk them until the yolks and whites are combined. Cook for about 3-5 minutes, stirring gently until they are fully cooked but still soft and creamy.

Toasting the Bread

  1. 4

    Toast Ciabatta

While the eggs are cooking, toast the ciabatta slices in a toaster or on a skillet until golden brown.

Assembling the Dish

  1. 5

    Build the Honey Goat Avocado

On each toasted ciabatta slice, spread a layer of the mashed avocado. Top with scrambled eggs, a handful of arugula, pickled red onions, sliced scallions, and crumbled honey goat cheese.
