    Thinly slice the red onion and place in a small bowl. In a separate bowl, mix the white vinegar, sugar, and salt until the sugar dissolves. Pour the mixture over the sliced onions, ensuring they are fully submerged. Let them sit for at least 30 minutes to pickle.

    In a non-stick skillet, heat a small amount of oil or butter over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny side up, over easy, etc.). Season with salt and pepper to taste.

    Toast the slices of sourdough bread until golden brown.
