Prepare the Filling
In a mixing bowl, combine the shelled edamame, chopped shiitake mushrooms, finely shredded cabbage, minced garlic, grated ginger, soy sauce, sesame oil, and salt. Mix well until all ingredients are evenly incorporated.

Make the Dumpling Dough
In a large bowl, mix the all-purpose flour and salt. Gradually add water while stirring until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Roll Out the Dough
After resting, divide the dough into small pieces. Roll each piece into a thin circle about 3 inches in diameter.
Assemble Dumplings

Fill the Dumplings
Place about 1 tablespoon of the filling in the center of each dumpling wrapper. Fold the wrapper over the filling and pinch the edges to seal tightly. You can also pleat the edges for a decorative touch.

Cook the Dumplings
In a large pot, bring water to a boil. Carefully place the dumplings in the boiling water and cook for about 5-7 minutes until they float to the surface. Remove with a slotted spoon and drain.

Prepare the Sauce
In a small bowl, whisk together soy sauce, honey (or maple syrup), sriracha sauce, rice vinegar, and sesame seeds until well combined. Adjust the sweetness and spice level to taste.
