    Begin by peeling and dicing the sweet potatoes into small cubes. Dice the red bell pepper and yellow onion. Mince the garlic cloves.

    Cook the Chorizo

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chorizo sausage and cook until browned and cooked through, about 5-7 minutes. Stir occasionally.

    Sauté the Vegetables

    Remove the chorizo from the skillet and set aside. In the same skillet, add the remaining 1 tablespoon of olive oil. Add the diced sweet potatoes and sauté for about 10-15 minutes, stirring occasionally, until they begin to soften.

    Add the diced onion, red bell pepper, and minced garlic to the skillet with the sweet potatoes. Season with salt and black pepper. Cook for another 5-7 minutes until the vegetables are tender and fragrant.
