Directions
- 1
Prepare the Ingredients
Begin by peeling and dicing the sweet potatoes into small cubes. Dice the red bell pepper and yellow onion. Mince the garlic cloves.
- 2
Cook the Chorizo
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chorizo sausage and cook until browned and cooked through, about 5-7 minutes. Stir occasionally.
- 3
Sauté the Vegetables
Remove the chorizo from the skillet and set aside. In the same skillet, add the remaining 1 tablespoon of olive oil. Add the diced sweet potatoes and sauté for about 10-15 minutes, stirring occasionally, until they begin to soften.
- 4
Combine Ingredients
Add the diced onion, red bell pepper, and minced garlic to the skillet with the sweet potatoes. Season with salt and black pepper. Cook for another 5-7 minutes until the vegetables are tender and fragrant.
- 5
Mix in Chorizo
Return the cooked chorizo to the skillet and mix well with the sweet potato and vegetable mixture. Cook for an additional 2-3 minutes to heat through.
- 6
Garnish and Serve
Remove the skillet from heat. Garnish the hash with micro cilantro before serving. Enjoy your chorizo sweet potato hash warm!
