Prep the Cutlets
Place the beef or chicken cutlets between two sheets of plastic wrap and gently pound them with a meat mallet until they are about 1/4 inch thick.

Season the Flour
In a shallow dish, mix the flour with salt and black pepper.

Prepare the Egg Mixture
In another shallow bowl, beat the eggs until well combined.

Prepare the Breadcrumbs
In a third shallow dish, place the bread crumbs.

Coat the Cutlets
Dredge each cutlet in the seasoned flour, making sure to coat evenly, then dip it in the beaten eggs, allowing the excess to drip off, and finally coat it in the bread crumbs, pressing them onto the surface.

Heat the Oil
In a large skillet, heat the olive oil over medium-high heat until hot.

Fry the Cutlets
Add the breaded cutlets to the skillet, cooking for about 4-5 minutes on each side until golden brown and cooked through. You may need to do this in batches.

Add Cheese
Once the cutlets are cooked, place a slice of Swiss cheese on top of each cutlet, cover the skillet, and let it sit for 1-2 minutes or until the cheese is melted.
Serving

Serve the Milanesa Suiza hot, topped with sliced tomatoes and a sprinkle of fresh parsley.
