In a bowl, combine the Wagyu beef with salt and black pepper. Gently mix to incorporate the seasoning without overworking the meat. Divide the mixture into two equal portions and shape them into patties.

Heat a grill or skillet over medium-high heat. Cook the patties for about 3-4 minutes on each side for medium-rare, or until they reach your desired doneness. In the last minute of cooking, place a slice of American mozzarella cheese on each patty to melt.

In a mixing bowl, whisk together the egg yolk, minced garlic, and lemon juice. Slowly drizzle in the olive oil while whisking vigorously until the mixture emulsifies and thickens. Season with salt to taste.

Toast the brioche buns lightly on the grill or in a toaster. Spread a generous amount of aioli on the bottom half of each bun. Place the cooked Wagyu patty with melted mozzarella on top. Add shredded lettuce and sliced tomato. Top with the other half of the brioche bun.
