Method
In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy.
In a separate bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
Cover the dough with plastic wrap and refrigerate for at least 1 hour, or until firm.
Assembly
Preheat Oven
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
On a floured surface, roll out the chilled dough to about 1/4 inch thickness. Use a cookie cutter to cut out rounds.
Transfer the cookies to the prepared baking sheet and bake for 10-12 minutes or until lightly golden. Allow to cool completely.
Spread a generous amount of dulce de leche on the flat side of one cookie, then sandwich it with another cookie.
Coat with Powdered Sugar
Dust the assembled cookies with powdered sugar before serving.
