If using chicken breasts, slice them horizontally to create thinner cutlets. For beef, you can use flank steak or sirloin, pounded thin to about 1/4 inch thickness.

Dredge each cutlet in flour, shaking off the excess. Dip it into the beaten eggs, allowing excess to drip off, then coat thoroughly with breadcrumbs.
