Method
Prepare the Chicken
- 1
Prepare the Chicken Breasts
Pound the chicken breasts to an even thickness using a meat mallet for uniform cooking.
- 2
Set Up Breading Station
In three separate shallow dishes, place flour in the first, beaten eggs in the second, and breadcrumbs mixed with salt and pepper in the third.
- 3
Bread the Chicken
Dredge each chicken breast first in flour, shaking off excess, then dip in beaten eggs, and finally coat with breadcrumbs, pressing gently to adhere.
- 4
Fry the Chicken
In a large skillet, heat olive oil over medium heat. Fry the breaded chicken breasts for about 4-5 minutes on each side or until golden brown and cooked through. Remove and let drain on paper towels.
Make the Salad
- 5
Prepare the Romaine
Wash and dry the romaine lettuce, then chop into bite-sized pieces and place in a large salad bowl.
- 6
Add Croutons and Cheese
Add croutons and grated Parmesan cheese to the chopped romaine.
Prepare the Caesar Dressing
- 7
Mix the Dressing
In a small bowl, combine mayonnaise, lemon juice, minced garlic, Worcestershire sauce, and anchovy paste. Whisk until smooth. Season with salt and black pepper to taste.
Assemble the Dish
- 8
Combine the Salad
Pour the Caesar dressing over the romaine salad and toss until evenly coated.
- 9
Serve
Plate the dressed salad and top with the fried chicken breasts. Serve immediately.
