Milanesa Preparation

    Prepare the Beef

    Pound the beef cutlets to about 1/2 inch thickness for even cooking.

    Set up Breading Stations

    In three separate shallow dishes, place flour in the first, beaten eggs in the second, and breadcrumbs mixed with salt and pepper in the third.

    Bread the Cutlets

    Dip each cutlet first into the flour, shaking off excess, then into the egg, and finally into the breadcrumbs, pressing to adhere.

    Fry the Milanesa

    Heat olive oil in a large skillet over medium heat. Fry the breaded cutlets for about 4-5 minutes on each side, until golden brown and cooked through. Drain on paper towels.

Shallot Cream Preparation

    Sauté the Shallots

    In a saucepan, melt butter over medium heat. Add sliced shallots and sauté until they are soft and translucent, about 5-7 minutes.

    Make the Cream

    Pour in the heavy cream, add salt and pepper, and simmer for another 5 minutes until slightly thickened. Set aside.

Toppings Preparation

    Sauté the Onions

    In the same skillet used for the Milanesa, add a little olive oil if needed, and sauté sliced onions until they are caramelized, about 10 minutes.

    Assemble the Dish

    Place each fried Milanesa on a plate, top with sautéed onions, mozzarella cheese, and a sprinkle of oregano. Broil in the oven for 2-3 minutes until cheese is melted.

    Drizzle the shallot cream over the top and garnish with grated parmesan before serving.
