Milanesa Preparation

Prepare the Cutlets
Pound the beef cutlets to an even thickness of about 1/2 inch using a meat mallet.

Set Up Breading Station
In three separate shallow dishes, place the all-purpose flour in the first, whisk the eggs in the second, and place the bread crumbs mixed with salt and black pepper in the third.

Bread the Cutlets
Dip each cutlet first in the flour, then in the beaten eggs, and finally coat them with the bread crumbs, pressing gently to adhere.

Fry the Cutlets
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the breaded cutlets and fry until golden brown, about 4-5 minutes on each side. Remove and drain on paper towels.

Prepare the Cheese
While the cutlets are frying, grate the Parmesan, and Mozzarella cheeses, and crumble the Gorgonzola and Provolone cheeses.

Assemble the Cheese
In a bowl, combine all the cheeses and mix well.

Top the Cutlets
Once the milanesa cutlets are fried, place them on a baking sheet and evenly distribute the cheese mixture over the top of each cutlet.
Baking

Melt the Cheese
Preheat the oven to 350°F (175°C). Place the baking sheet with the topped cutlets in the oven and bake for about 10-15 minutes or until the cheese is melted and bubbly.

Remove from the oven and let cool for a few minutes before serving. Enjoy your Milanesa 4 Quesos!
